As a teenager I worked in many fast food and casual dining restaurants learning the basic skills of the industry and continued to test out recipes on family and friends. Along the way baking and pastries became my passion and I started my career at Marchelino in Mississauga, Ontario as a baker. I quickly learned their operation and became a Pastry Chef earning a Certified Food Service Manager designation through the Canadian Restaurant Food Association.
Over the next several years I was a Head Pastry Chef in many of the finer hotels and resorts throughout Canada, including The Keltic Lodge in Cape Breton, Nova Scotia and Delta Lake Joseph in Muskoka, Ontario. Upon my return to Toronto, I became a Chef for the film and commercial industries, catering meals of breakfast, lunch, dinner and pastries etc. for 150+ people on food trucks at their on-set locations.
Over the past 10 years I worked for Sam’s Club and Wal-Mart Canada holding various management positions in Bakery, Food Merchandising, Operations, Buying and eventually became a District Manager of the fresh food departments. Through a restructuring last year, Wal-Mart had eliminated their field teams. With time off to rejuvenate and decide my next steps, I could not deny my passion for food and the excitement I felt in the thought of owning my own restaurant.
The search began for the perfect location which I found at the Barrie By the Bay building at 80 Bradford Street Barrie, Ontario. With 142 tenants occupying the building and a generous flow of walk in traffic this location allows me to create daily specials, homemade muffins, croissants, pastries, all on the hope of giving the customers what they want, home cooking with fresh ingredients! I buy many of my ingredients through surrounding local business and throughout the summer season you may see me out with my niece Sarah, my nephew Zachary (who are the inspiration for the name of my restaurant!) and sister Leah at Barrie Hill Farms picking fruits and vegetables that help influence my weekly menu.
Raised in Thornhill, Ontario with my two sisters, I am the middle child and born with the cooking gene. Both my Mother & Grandmother enjoyed entertaining and cooking.
My earliest memories in the kitchen are of making my parents breakfast in bed on the weekend, combining all kinds of ingredients to see what worked well together, and of course what my parents reactions would be. But no matter what I put together and created, they always cleared their plates with a smile!
